The 2010 April Daring Cooks challenge was hosted by Wolf of Wolf’s Den. She chose to challenge Daring Cooks to make Brunswick Stew. Wolf chose recipes for her challenge from The Lee Bros. Southern Cookbook by Matt Lee and Ted Lee, and from the Callaway, Virginia Ruritan Club.
This was my first challenge after a hiatus of a few months while I was overseas. Excited to get back to the kitchen and what a challenge to start it off! I've never attempted a stew before and I must say the result was very yummy! Managed to make use of my newly acquired cast iron casserole but it was a tad too small for the quantities used in the recipe and I managed to make a small mess of my stove from all the overflowing.
As you can see the pot was pretty full and I did not manage to squeeze in all the beans and corn.
I must say the result was pretty good. The soup was very tasty and the ingredients went well together and I must say this is my first time cooking rabbit! Am leaving the pot overnight and having a small get together tomorrow and hopefully it will be tastier tomorrow!
